Selection tips
- Look at the color. Ripe avocados are usually dark green or brown. If they're too green, they're not ripe and won't have much flavor. If they're too brown, they may be overripe and starting to go rancid.
- Touch the skin. The skin of a ripe avocado should give slightly to the touch. If it's too hard, it's not ripe. If it's too soft, it may be overripe and starting to go rancid.
- Smell the avocado. A ripe avocado should smell fruity. If it has no smell, it's not ripe.
- Avoid avocados with spots. Spots are a sign of spoilage.
If you follow these tips, you'll be able to choose the ripest and most delicious avocado.
Conservation
Avocados typically ripen in 3 to 4 days at room temperature. To speed up the process, you can place them in a paper bag with a banana.
Avoid refrigerating the fruit until it's ripe to prevent problems with the natural ripening process. If you want to preserve part of the fruit, it's best to keep the seed inside to aid in preservation.

I bought 1 kilo of these organic avocados from Los Realejos and they are truly incredible. They have that nutty flavor you get from avocados grown here when they're perfectly ripe.
