It is a curl type cheese but it is shaped like a ball. That ball is initially covered with ash and is completely black. It is then left to mature for a week or ten days, so that it is suitable for consumption and the penicillium mold colonizes its surface and covers it white. Its production process is relatively long and can last between 12 and 14 days.
